Crown Athletics Cross Country – Mileage Tracker
2012 was our first year participating in the Crown Athletics Cross Country team. We were thoroughly impressed with the coaches, the runners, the parents, and the entire experience. My oldest daughter ran last year but our plan is for all four of our older kids to participate in the 2013 season. The head Coach (Howard Brummel) ended the season by requesting that all of the kids log their running hours during the off-season so they will be prepared for a successful 2013 season (and so they can stay healthy and fit through the winter). To help my kids meet this goal we have decided to start running together as a family. Continue reading Crown Athletics Cross Country – Mileage Tracker
Au Gratin Potatoes (Fantasy Potatoes)
Potatoes are a unanimous favorite in our family. We like them mashed, smashed, whipped, creamed, scalloped, fried, sauteed, roasted, baked, and even just boiled and salted. Simply put, we love potatoes in whatever form we can get them!
HOWEVER, this next recipe for Au gratin potatoes (ahem . . . “Fantasy Potatoes”) is in a class all by itself. Really. You will never taste a more decadent, flavorful version of potatoes. I promise. The rewards are great for such a small amount of effort. Continue reading Au Gratin Potatoes (Fantasy Potatoes)
Apple Cranberry Crisp with Vanilla, Maple, and Spice
This dish has been a favorite of our family for years. It gets a little something extra from the vanilla, maple, and spice. It is also heavy on the topping, which is always a winner at our house! The fruit layer is just the right combination of tart and sweet, while the “crisp” layer is exactly what a sweet and crispy layer should be. Perfect Brazilian Cheese Bread – Pao de Queijo
If you have ever been to a Brazilian steak house, you have likely not forgotten what is casually presented to patrons as “cheese bread”. The servers dutifully come around with the platter of accompaniments . . . and then they nonchalantly list the cheese bread as if it’s no big deal:
“Ma’am, would you like some fried bananas, yucca fries, or cheese bread?”
One might think that cheese bread is not noteworthy. That it is plain. Ordinary. Humdrum.
And one would be wrong. Continue reading Perfect Brazilian Cheese Bread – Pao de Queijo
Purchasing land – our story
My wife and I have always dreamed of purchasing land (2 or 3 acres of private, beautiful land was our goal) but the land we could afford was either way out in the boonies or not ideal. For example, we found a 3 acre plot in 2011 that we loved at first sight but once we got our hands on the plat information we discovered that the majority of the lot’s land was in a flood plain. The land was affordable and it was the last lot available in a built out large-estate-lots neighborhood but it was the last lot available for a reason. The old adage…”if it seems too good to be true”..was right on. We eventually abandoned the idea of purchasing that lot and went back to enjoying life on our fifth of an acre lot. Home Designer Architectural 2012 Review and Screenshots
Shortly after we closed on our land purchase we began dreaming about what our future home might look like. We tried sketching out plans on paper and we tried some free online options but we usually just ended up frustrated and irritable after a short session of working on our new home design.
I finally decided we should consider investing some money in a decent home design application for our computer. I did the research, starting with TopTenReviews.com. Continue reading Home Designer Architectural 2012 Review and Screenshots
YouVersion – Best Bible App
I am an extremely busy father of 5 and taking the time to write a post on a Bible app is not something I ever thought I would find myself doing…yet here I am, excited to write this post. Why? I have been a Christian for many years now but up until recently I had never read the entire Bible “cover to cover.” I tried many times throughout the last 20+ years but never made it more than a few chapters before I got distracted with something else and lost sight of my goal.
